Vanilla Pudding Cinnamon Rolls

I got this recipe from My Kitchen Cafe.  I didn't have a good cinnamon roll recipe and this one is great.  It is also pretty easy.  

Rolls:
1/2 c. warm water
2 Tbsp. yeast
2 Tbsp. sugar
3 1/2 oz. pkg instant vanilla pudding
1/2 c. butter, melted
2 eggs
1 tsp. salt
6 + c. flour

In a small bowl combine water, yeast and sugar.  Stir and set aside.  In large bowl take pudding mix and prepare according to package.  Add butter, eggs and salt.  Mix well.  Add yeast mix and blend.  Gradually add flour, knead until smooth.  The dough should be soft not sticky.  Place in greased bowl.  Cover and let rise until doubled.  (About 1-2 hours)

Filling:
1 c. butter, softened
2 c. brown sugar
4 tsps. cinnamon

Once dough has risen roll our on floured surface.  Take butter and spread over dough.  Mix brown sugar and cinnamon and sprinkle on top.  Roll very tightly.  Cut every 1 1/2 inces with thread or serrated knife.  Place on greased cookie sheet.  Cover and let rise until doubled again.  (another 1-2 hours) Bake at 350 degrees for 15-20 mins.  

Frosting:
8 oz. cream cheese, softened
1/2 c. butter, softened
1 tsp. vanilla
3 c. powder sugar
2-3 Tbsp. milk

Mix cream cheese, butter, vanilla and powder sugar.  Add milk gradually.  Frost warm rolls.
