Carne Asada Marinade
2 lbs. skirt steak or other thin steak
1/2 c. olive oil
1 onion-sliced thinly
4 cloves garlic, peeled and coarsley, chopped
2 Tbsp. lime juice
3 Tbsp. orange juice
1 tsp. kosher salt
1/2 tsp. cracked black pepper
Smoky Queso Sauce
2 Tbsp. butter
2 Tbsp. flour
1/4 tsp. salt
1/4 tsp. pepper
1 c. milk
1 c. shredded cheddar cheese
2 tsp. adobo sauce (from can of chipotle peppers)
1/2 c. salsa
Favorite pizza dough (I used Fresh n Easy's)
2. c. shredded mozarella cheese
1/4 c. fresh cilantro, chopped
1. Place all carne asada ingredients into large ziploc bag. Seal and refrigerate 1-4 hours.
2. Preheat grill. Remove steak from marinade and grill for about 2 mins. per side. Once beef has been grilled let cool and then slice into thin strips and set aside.
3. Prepare smoky queso sauce. Melt butter in a saucepan over medium heat. Whisk in flour, salt and pepper until smooth. slowly whisk in milk whisking constantly until smooth. Increase heat while whisking until mixture comes to a low boil. Once starts to boil, reduce heat low and stir in cheddar cheese until smooth. Add adobo sauce and salsa.
4. Preheat oven to 410 degrees. Spread pizza dough onto pizza pan. Prebake for 8 mins then remove. Spread queso sauce over dough, then layer beef. Top with mozzarella cheese and bake for an additional 8-10 mins or until hot and bubbly. Remove and let cool for 3-5 mins. Top with cilantro.
