Ok lately, (you couldn't tell from my first two posts), I have been on this kick of wanting to eat a little healthier and more homemade. I have been trying my hand at making homemade wheat bread (still needs work) and collecting recipes for more homemade items. Don't get me wrong I still have tons of junk food and frozen food in my house for those nights that I am just crazy running but when I have time I am going to make homemade fresh foods. Anyway, Ryan gave me this recipe years ago out of a Men's Health magazine. At the time I just tucked it away. I came across it the other day and thought I would try it out. Don't let the name or the way it looks fool you. It was actually really good and even Ryan liked it and said he would have me make it again. You can substitute the ground turkey for beef if you prefer. It was super easy and really delicious and only 170 calories when you use the ground turkey (for those watching their calories). Just give it a try.
2 lbs. of ground turkey (or beef)
3 Tbsp. yellow corn meal
1/2 c. chopped onions (or minced onion)
1 medium jalapeno pepper, seeded and minced
1/4 c. egg substitue (or I just used egg whites and I actually used one)
3/4 tsp. salt
1/2 c. salsa
Preheat oven to 375 degrees. Spray four large size muffin cups (I used mini loaf pans). In a medium mixing bowl, combine ground meat with cornmeal, onion, jalapeno, egg and salt. Mix well. Fill each pan with equal amount of meat. Bake 20-25 mins or until cooked through. Remove and place on plate. Top with salsa. You can serve with rice, mashed potatoes, sweet potatoes, salad..... the options are endless. Enjoy.
