Tonight I decided to try a recipe from For the Love of Cooking. I saw these pizza bites and thought they looked great and I know my family loves pizza so I thought I would give them a go. They were a hit. My kids scarfed them down commenting the whole time how great they were, or at least Tyler did. They are great as a meal or with the holidays upon us and holiday parties they would make great appetizers. Give them a try.
Pizza Dough (homemade or store bought)
shredded mozarella cheese
pepperoni slices
Feta cheese
Kalmata olives
dried basil, to taste
dried oregano, to taste
dried parsely, to taste
garlic powder, to taste
sea salt and cracked pepper, to taste
Parmesan Cheese
olive oil cooking spray
marinara sauce, for dipping
Make pizza dough or if using store bought let it rest on counter for 20 mins. Preheat oven to 400 degrees. Coat pie dish with cooking spray. Grab a walnut size piece of dough and flatten it with your hand. Place desired ingredients (except for marinara sauce) in the middle of dough. (I made just cheese, cheese and pepperoni, and kalmata olives and feta cheese). Seal dough around filling and place seam side down in pie plate. Repeat. Coat each ball with olive oil spray and sprinkle with basil, oregano, parsley, garlic powder, salt, pepper and parmesan cheese to taste. Bake for 16-18 minutes or until dough is a golden brown. Serve with warm marinara for dipping.
Pizza Dough Recipe
I made my pizza dough and have a great one from my friend Carolee. It is super easy to make and tastes great.
1 Tbsp. active dry yeast
1 cup of warm water
1/2 tsp. sugar
1/2 tsp. salt
1 Tbsp. olive oil
2 1/2 to 3 cups flour
Place yeast into the bowl. Add water and sugar, stir to combine. Let yeast rise for 5 mins or until foamy. Add salt, olive oil and 1 cup of flour into a mixer. Add yeast and mix until blended. Add an additional 1 1/2-2 cups of flour, mixing until dough forms into a ball. Remove dough from bowl to a floured surface and knead 8-10 mins. Place dough into a greased mixing bowl, cover and let rise until doubled, about 1 hour. Punch dough down. Form into small pizza bites or on a surface dusted with cornmeal form dough into large circle . Remove to stone, add toppings for large pizza and bake for 10-15 mins at 400 degrees.
