Beef Enchiladas

So the other day I made some homemade beef enchiladas or should I say Semi Homemade. A friend asked if I was going to post it on my recipe blog so I thought I would. It is so easy though that anyone could have thought of it. I used some leftover roast beef that I had cooked on Sunday for my meat.

Roast beef (or I have done it with shredded chicken also)
1 small onion, chopped
shredded cheddar cheese
1 can of olives, chopped
2 small cans of red enchilada sauce ( I like the Macayo brand)
12 corn tortillas

Lightly fry corn tortillas and set aside. Put a little sauce on the bottom of an 8x8 pan. In a tortilla put beef, some chopped onion and olives, a big spoonful of sauce and shredded cheddar cheese. Roll up and put in pan. Repeat with other tortillas. Pour sauce on top so it is covered well. You don't want it to soupy. You may use the rest of your enchilada sauce or just some of it. Top with cheddar cheese. Bake at 350 degrees for 40-45 mins.

Sorry it is not precise but it is really delicious.
