Sesame Mandarin Quinoa Salad


Once again here is another Picky Palate recipe. What can I say she has some pretty good ones. So since it is a New Year I am sure a lot of are wanting to eat healthier. Well here is a great salad for your New Years Resolution. It is so good and quinoa is supposed to be very good for you. I love that it has feta cheese in it. Anything with feta to me is better. Give it a try.

1 c. uncooked Quinoa
1/3 c. vegetable oil
1 Tbsp. balsamic vinegar
1/2 Tbsp. sugar (or you can use 1 Tbsp. of a sugar substitute)
2 Tbsp. Sesame oil
salt and pepper to taste
1/2 c. sweet peppers, chopped
1/4 c. green onions, green parts
1/4 c. fresh parsley
1/4 c. feta cheese
1 c. mandarin oranges

Prepare quinoa according to package. Transfer to bowl and cool. In a small bowl mix oil, balsamic vinegar, sugar, sesame oil, salt and pepper. Pour over cooled quinoa and mix. Add peppers, green onions, parsley, oranges and feta. I acutally don't add the feta to the salad but to my bowl instead. Refrigerate until ready to serve.
