I got this recipe from the For the Love of cooking blog and I had to try it. I love lemon and these were delicious. It had the right taste of lemon and the icing was awesome. I made a little change to it and added white chocolate chips to them. I really liked the combination.
3 c. flour
1 tsp. baking powder
1/2 tsp. salt
2 sticks of butter, softened
1/2 c. sugar
1/2 c. powder sugar
2 eggs
2 Tbsp. finely grated lemon zest
1/4 c. fresh lemon juice
1 tsp. vanilla
white chocolate chips, optional
Preheat oven to 350 degrees. In small bowl combine flour, baking powder, and salt. Beat softened butter in separate bowl until creamy. Add sugars. Beat eggs followed by lemon zest, lemon juice and vanilla. Add flour mixture and mix. Stir in white chocolate chips. Scoop out tablespoonful of dough and roll with hands into a ball. Place on cookie sheet and flatten to 1/2 inch. Bake 13-15 mins.
Icing
1 c. powder sugar
1 Tbsp. lemon juice
2 tsp. milk
